You have probably already seen it in an Indian restaurant, maybe you are even crazy about it: the palak paneer. Pankaj offers you his recipe; very tasty, thanks to the spices. It's up to you to adapt it according to your taste!
Ingredients for an Indian palak paneer
- Spinach (frozen) - about 500gm
- 1 medium-sized onion
- 2 or 3 medium tomatoes
- Garlic - 2 or 3 cloves
- Ginger - 8 - 12 grams
- Cumin powder and seed
- Coriander powder
- Chilli powder
- Turmeric powder
- Crème fraiche
- Paneer (you can generally find it in asian shop)
Note: You can adapt the spices as per your taste, you don't have to use all of them.
Preparation of the palak paneer according to Pankaj's recipe
- Cook the frozen spinach in a pan. When it is ready, let it rest on the side
- In another pan: pour some oil. When the oil is hot, add half a tbsp of cumin seeds
- Add the onion and garlic at medium to high heat. Let it turn golden-brown, then add the ginger. Wait a few minutes for the mixture to get brown without stopping to stir to prevent it from sticking
- When everything has turned brown (or fried properly), add the tomatoes, previously cut into small pieces
- When the tomatoes are well cooked and the tomato skin has left the pulp, put it aside to cool
- When the tomatoes have cooled down, put the tomatoes and spinach together and blend them. Blend everything together to create a homogeneous mixture
- In a pan, heat up some oil and add some cumin, chilli, coriander and turmeric powder
- When the spices are a little browned, add the spinach and tomato mixture, stirring as you go along
- Then let simmer a little while stirring. Add about 100g max of crème fraiche and a little salt as per your taste
- Then let simmer between 5 and 8 min while stirring
- Time to add the paneer and leave for another 5 min!
